S'mores Cookies

S’mores cookies are definitely the cookie of the summer! These cookies are a “glorified” chocolate chip cookie and super easy (and fun) to make!

I don’t know about you, but we usually buy s'mores ingredients at the beginning of the summer and only make them once or twice. Here is a great way to use up the extra chocolate, graham crackers, and marshmallows you may have laying around. I used a dark chocolate Hershey’s bar to replace some of the chocolate in my chocolate chip cookie recipe and it was delicious, but feel free to use a regular Hershey’s bar, or just chocolate chips instead.

1 Dark Chocolate Hershey's Bar
10 Marshmallows, Cut in Half
5 Crushed Graham Cracker Sheets

Instructions

1Combine flour, baking soda, cornstarch, and salt together in a large bowl - whisk together and set aside.
2Combine melted butter, brown sugar, and granulated sugar together with a stand or hand mixer. Add in the egg, egg yolk, and vanilla extract. Mix until fully combined, about 30 seconds.
3Add the dry ingredients to the wet and mix together. Fold in the chocolate chips, graham crackers, and chopped chocolate bar.
4Scoop dough into 2 tablespoon balls. Push each cookie dough ball down and press half of a marshmallow into the middle. Round the cookie dough around the marshmallow. Refrigerate for 30 minutes to 1 hour.
5Bake at 350° for 10-12 minutes. Top with extra crushed graham crackers and chocolate!
