Cake Batter Cookies

A perfect mashup of a white chocolate chip cookie and cake batter: These cookies are SERIOUSLY the BEST… They are soft, but have the perfect chewy texture with a little bit of a crunchy edge. Oh and did I say they are FILLED with sprinkles?! A party in your mouth :)

I’m not kidding when I say these are the BEST cookies ever. Any time I bring them to a party, they get rave reviews. They take a little bit of chilling time in the fridge, so be sure to plan ahead when making them (but they are seriously worth it)! Chilling the dough allows the butter to firm up and prevents the cookie from spreading too much in the oven.


These cookies use a dry boxed cake mix. I like to use a yellow or vanilla cake mix. I’m sure using chocolate or another flavor would be great, but I have not tried that yet. Let me know if you do! The fun part about these cookies is that you can use whatever sprinkle mix you would like. I have used red, white, and blue for the 4th of July and red and green around Christmas! Have fun making (AND EATING) them!

Cake Batter Cookies

Ingredients

  • 2 Cups all-purpose flour
  • 1 Box yellow or vanilla dry cake mix
  • 1 Teaspoon baking soda
  • 1 Teaspoon salt
  • 3 Sticks softened butter
  • 1 Cup granulated sugar
  • 1 Cup packed light brown sugar
  • 2 eggs at room temperature
  • 1 Tablespoon pure vanilla extract
  • 2 Cups white chocolate chips
  • 1 Cup sprinkles

Instructions

  1. In a large bowl, sift flour, cake mix, salt, and baking soda together. Set aside.
  2. Using a hand mixer or a stand mixer, beat the softened butter and both sugars together on medium speed until light and fluffy. Add the egg and vanilla and beat until combined.
  3. Add the dry ingredients to the wet and mix until just combined. Add the white chocolate chips and sprinkles and mix on low.
  4. Cover dough and refrigerate for one hour.
  5. Scoop dough into balls using 1.5 tablespoons of dough per cookie and refrigerate dough balls for at least one more hour before baking.
  6. Bake at 350° for 10-12 minutes depending on your dough size!
